Big T Tomato Pie

Tomato Pie is the ultimate southern summer dish. Bright tomatoes layered with fresh basil and green onion are traditionally topped with a blend of mayonnaise and shredded cheese. But we’ve made our version of this classic with a twist - Big T makes a delicious substitute for the mayonnaise, adding an extra layer of Lowcountry flavor.
Ingredients
1 pre-baked pie crust
6-8 medium tomatoes, sliced
1/2 cup fresh basil, sliced
1/2 cup sliced green onions
1/2 cup shredded mozzarella cheese
1/2 cup shredded cheddar cheese
Steps
Preheat the oven to 350 degrees.
Place the sliced tomatoes in a colander and sprinkle with salt. Let sit for about 30 minutes to remove excess water. Lightly squeeze out additional moisture before using.
Layer the tomatoes, basil, and green onions in the pie shell in two layers, alternating ingredients.
In a separate bowl, combine the Big T Crab Dip and both cheeses.
Spread the mixture on top of the pie, covering the ingredients to the edges of the pie shell.
Bake in the oven until the top is browned and bubbly, about 25-30 minutes.
Remove from the oven and let sit 10 minutes before slicing.
