You don’t have to go out to eat to enjoy perfect Queso! Our Spicy Crab Queso recipe kicks up the original flavors with Big T’s Wild Caught Crab Dip. We like it pretty spicy, so we use a poblano, spicy pepperjack cheese and our Premium Spicy Crab Dip made with jalapeños. It’s great with chips or served on our Southern Seafood Nachos.

Don’t like it quite so hot? This recipe is easy to customize to your household heat level! If you are craving a milder version, you can substitute green bell peppers for the poblanos, monterey jack for the pepperjack cheese or use our original Crab Dip. Any way you mix it up, you’ve got a creamy queso made with REAL ingredients!

Ingredients

  • Canola oil

  • 1/4 sweet onion, minced

  • 2 cloves garlic, minced

  • 1/2 poblano pepper, minced

  • 1 tablespoon cornstarch

  • 3 cups evaporated milk or half & half

  • 1 8-ounce container Big T Premium Spicy Crab Dip

  • 8 ounces pepperjack cheese, grated

Steps

  1. Heat a saute pan over medium heat. Add enough canola oil to lightly cover the bottom of the pan.

  2. Add the shallot, garlic and pepper. Saute until softened.

  3. Add the cornstarch and stir until it evenly coats all the vegetables.

  4. Slowly whisk in the evaporated milk. Increase the heat to medium-high and simmer until thickened.

  5. Once thickened, turn the heat off and whisk in the crab dip and pepperjack cheese.

  6. Serve with tortilla chips for dipping or use in Big T’s Southern Seafood Nachos.
