Big T’s Top 5: Seafood Pantry Essentials
/House Autry Seafood Breader:
As much as you want to say House OF Autry, just no....it’s House Autry. No clue why! It’s the best multi-purpose seafood breader around. My dad likes to use an egg white only- makes them light and fluffy.
Homemade Remoulade:
While there are some fine pre-made remoulade sauces out there, homemade is always best. Big T is a sauce nut and this is one of his favorites.
- 1 cup Dukes mayo
- 2 T Heinz Ketchup
- 2 T Creole Mustard
- 1 T Sweet Relish
- ½ cup lemon juice
- Salt and Pepper
- ½ c finely chopped green onions
- 1 ½ t garlic
- 1 t sweet paprika
- Combine all ingredients and chill for at least 2 hours
Homemade Cocktail Sauce:
Again, Big T loves the sauce-ha!! No need to buy cocktail sauce because this one is really simple. Ketchup (always Heinz for me), horseradish (I like the one in the refrigerated section- HT makes a good one from their Fisherman’s Market line), Worcestershire, lemon and our favorite hot sauce- Crystal’s.
- ½ c Heinz ketchup
- 2 T horseradish, plus more to taste (I love horseradish, so I add more)
- 1 t fresh lemon juice
- ½ t Worcestershire Sauce
- ½ t hot sauce (we love Crystals hot sauce)
- Combine and chill if desired
Homemade Seafood Seasoning mix:
Mix together garlic powder, cayenne pepper, dried thyme, basil and oregano, paprika (I like to use smoked paprika) and onion powder. I also like to toss in a little espelette powder, which adds in a subtle heat, slightly smoky and citrusy.
- ½ cup table salt
- ½ c granulated garlic
- ¼ c ground pepper
- 2 T cayenne pepper
- 2 T dried thyme
- 2 T dried basil
- 1/3 c paprika
- 3 T granulated onion
- Combine all together and store in a glass mason jar
Fresh Herbs and Lemons:
It’s always good to have fresh herbs and lemons on hand for stuffing a whole fish for the grill or adding to a seafood pasta sauce.
