Twice Baked Crab Stuffed Potatoes

What’s better than twice baked potatoes? Twice baked Crab stuffed potatoes! We love how the addition of Big T crab dip adds rich crab and creamy cheese flavor to plain red potatoes. With just 5 ingredients, this recipe is simple enough for cozy weeknight fall dinners but also elegantly delicious for special occasions and holidays!

Ingredients

  • 4 medium red potatoes (about 2 pounds)

  • About 1/4-1/2 cup milk

  • 1 8-ounce container Big T Crab Dip

  • 1/2 cup shredded cheddar or jack cheese

  • 1 tablespoon chopped fresh chives

Steps

  1. Preheat broiler on high.

  2. Boil or microwave potatoes until they are fork tender.

  3. Working quickly slice hot cooked potatoes in half horizontally.

  4. Use a melon baller to scoop out the flesh of the potatoes, leaving a little bit around the edges to create a rim.

  5. Place potato flesh in a small bowl. Add milk, a little a time, and mash potatoes until smooth.

  6. Add Big T dip to the potatoes, and stir until dip is melted and mashed potatoes are creamy. Add additional milk in tablespoonfuls as needed to create a smooth and creamy consistency. Season with salt and pepper.

  7. Scoop crab potato mash back into the potato shells. Top each potato half with some of the cheese.

  8. Broil potatoes until cheese is melted and potato mash is bubbling and hot.

  9. Top with some fresh chives and serve immediately.
